Hey, I'm thinking of getting an iPod touch. However, my number one concern is how it will behave if I keep it in my pocket, like I do when I walk everywhere. Will it keep changing itself? Will it be easy for me to switch songs?

Anyone had one?

All I have is a Shuffle, but never had any problems carrying it in a pocket.

There are basically two ways these types of this work. The first is how the DS and your MobilePro do it~ Pressure. This type of screen would get all sorts of hits if left open in your pocket. The other type, used in the little mousepads on laptops and in the wheel part of Apple's clickwheel on a normal iPod is based on capacitance. The touch is presumably using that method, in which case, I can see potential for it to happen sometimes, but generally, it shouldn't be too big a problem, and I'm sure it's smart enough to ignore giant "this could only be a thigh clicking me" clicks. In a coat pocket or the like (where it's not right up against your skin), there should be no risk at all.

If you want to experiment a bit, try putting your pants or whatever over the mouse pad on your laptop and see how thick it has to be before it can't see your finger anymore. (Note that more fingers are easier to see, and that the thickness of the screen itself being overtop in the touch would shrink its range a bit)

I don't have a touch, but my friend's IPhone has a "lock screen" function and I would guess the touch has the same.

This -- the lock screen has a slider bar that you have to slide from one end of the screen to the other to unlock it, it doesn't take very long, but it's a very deliberate type of movement that probably wouldn't be accomplished by accident. I would assume the touch would be the same as the iphone in that respect. But, I would suggest talking to someone at an apple store to be sure.
